So it has been raining for days here in South Florida and I am on a roll cooking.   Well I usually cook this much but don't normally document it.  So I decided to try and make up a recipe.   Sometimes I am good at it and sometimes not so good.   These actually turned out super yummy!  So enjoy!
Apple Empanadas 
3 apples
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp lemon juice or extract
2 tsp honey
2 Tbsp butter

Peel, and dice apples discarding the peel.  Throw all in a pan and cook on med. low until apples are done (about 10 min.) Cut off and let cool.

Dough
1/2 cup all purpose flour
1/2 cup coconut flour ( Whole Foods sells this)
dash salt
4 Tbsp butter chilled
6 Tbsp water ( to moisten dough)

Egg wash -  one egg and 1/4 cup of water mixed to top empanadas before baking.



Cut butter into flour and salt until course, adding small amounts of water.   Dough will be pretty dry.  Roll with rolling pin down to  1/4 inch.  Take a bowl about 4 in. wide and cut out circles.  Place small Tbsp of apple mixture into middle, fold and press outside of circle with a fork.   Brush egg wash on top.   Bake at 350 for 15 to 20 min. making sure not to burn them.  Tada!  Desert!  If I had vanilla ice cream, I'd scoop it on top of these.
